In a large pot, boil the potatoes until they are tender. Drain and set aside.

In a pan, sauté the onions and ginger until the onions are translucent.

Add the cumin seeds, coriander powder, and garam masala and cook for an additional minute.

Add the peas and sauté for a few minutes until they are heated through.

Add the cooked potatoes to the pan and mash them with the other ingredients.

Season with salt and add the chopped cilantro. Mix well.

Take a samosa wrapper and spoon 2-3 tablespoons of the potato mixture onto one half of the wrapper.

Fold the wrapper over to form a triangle and seal the edges with a bit of water.

Repeat with the remaining wrappers and filling.

Heat oil in a deep pan or wok and gently place the samosas in the hot oil.

Fry the samosas until they are golden brown and crispy, turning occasionally.

Remove the samosas from the oil and drain on a paper towel.

Serve warm with tamarind chutney or mint chutney.

You can also bake the samosas in the oven at 375F for 15-20 minutes instead of deep frying.

Enjoy your homemade samosas with your favorite chutney!
